Creole Shrimp & Garlic Cheese Grits

Mardi Gras, or “Fat Tuesday,” is the last day of the carnival season as it always falls on the day before Ash Wednesday, the first day of Lent. Fat Tuesday gets its name from the tradition of being the last night of indulgence of eating richer, fatty foods before the ritual fasting of the Lenten season.

In honour of this tradition, I decided to whip up an authentic Creole shrimp and grits recipe. If you weren't aware, the difference between Cajun and Creole dishes are the use of tomatoes. Creole recipes include tomatoes, while proper Cajun recipes do not.

The grits in this recipe are kicked up to perfection with the addition of garlic and cheese. I used a smoked cheddar, parmesan and sharp cheddar blend. The smoked cheddar gave such a great depth of flavor and paired perfectly with the creole spices in the shrimp. You can also add bacon to this dish to make it extra indulgent. Might as well live it up on Fat Tuesday, right? Try making a traditional King Cake for dessert they are delicious! One was recently sent to my office from Cannata's in New Orleans. It was a mouthful of sugary cinnamon deliciousness and I enjoyed reading about the history and traditions behind the famous cake. Tell me about your favorite southern style foods in the comments below. Happy Mardi Gras! Let the party begin!

Creole Shrimp & Garlic Cheese Grits

For the shrimp:
1 pound of large shrimp; peeled and deveined
3 cups of seafood stock
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1 medium onion, finely chopped
1 jalapeño, finely chopped
2 celery ribs, finely sliced
1 green bell pepper, finely chopped
2 cloves of garlic, minced
2 teaspoons Creole seasoning
½ a lemon, juiced
1teaspoon Worcestershire sauce
1 (6-ounce) can tomato paste

1 bay leaf
chopped chives for garnish

Directions:
1.     Heat butter in a Dutch oven over medium heat; stir in flour and cook, stirring constantly until flour is caramel colored, creating a golden blonde roux (about 8 to 10 minutes). Add onion, celery, green pepper, jalapeño and garlic, stirring often, about 5 to 7 minutes or until tender. Stir in Creole seasoning, lemon juice, and Worcestershire sauce. Add the tomato paste and stir until the vegetables are evenly coated. Slowly add 2 cups of broth, stirring constantly to create a thick sauce. Add the bay leaf, reduce the heat to low, and cook, stirring occasionally, for 45 minutes.
2.     While the broth simmers, sauté the shrimp in a medium saucepan with 2 tablespoons of olive oil until just pink. Add the shrimp to the broth for the last 10 minutes of cooking, stirring in the remaining shrimp broth ½ cup at a time until the desired consistency is met.

For the grits:
2½ cups milk
2½ cups water
1 teaspoon salt
1 tablespoon garlic, minced
2 tablespoons butter
1 cup of shredded sharp cheddar cheese or variety of your choice
1½ cups old fashioned grits (not instant)

While the shrimp is simmering, bring milk, water, and salt to a boil in a saucepan over high heat. Gradually stir in the grits and garlic. Reduce heat to low, and simmer, stirring occasionally, 10 to 12 minutes or until thickened. Stir in the cheese and butter until melted and well combined.

Serve Creole Shrimp over the garlic cheese grits. Sprinkle with chopped chives, if desired.

Valentine Chocolate Toffee Crackers

I can't believe Valentine's Day is this Saturday! This year is flying by already. If you're looking for a quick and easy treat to make for the ones you love, or to share with co-workers and friends, this recipe for Chocolate Toffee Crackers is perfect. I have shared this one before for Halloween and wanted to show you how versatile it is for any occasion, just by switching up the sprinkles. How cute are these heart and ball sprinkles I used for Valentine's Day?

I recently made a batch of these for the Super Bowl and the entire plate was consumed in under 20 minutes. They only take about 30 minutes to make and truly are like candy on crack.

Now that we've gotten the chocolate part of the holiday covered, let's talk love. My Mom and her friend Bonnie have been delivering Valentine cards to the elderly couples in the senior community by our old neighborhood, for the past 11 years. Last year was the first time I got to go with them and participate. It was so much fun to hear about all of the stories that have taken place over the years and to see how much this kind gesture of love means to the residents. I'm looking forward to joining them again this Saturday for the twelfth year running. I'll be sure to take pictures and update this post accordingly.

What fun Valentine's Day traditions do you have? Leave a comment below with your favorite Valentine candy and tell me your favorite way to celebrate. My favorite treat are my Mom's famous sugar cookies. I'm looking forward to breaking my meal plan to enjoy a few this weekend.  I'd love to hear your stories, memories and traditions. Here's wishing you lots of love and reasons to smile.  XOXO

Country Slow Cooker Chicken and Gravy (Clean Eating)

Did you know that there was a Katy Perry concert yesterday? Oh and some football.. Haha kidding...I do enjoy football, I was just neutral on both teams and more interested in socializing and enjoying some good food.

I don't know about you, but I couldn't resist cheating on my diet with the amazing Super Bowl spread we had laid out. I took a big batch of my Tangy Guacamole to share and munched on some much needed junk food while pretending to watch the game. The girls and I had fun catching up and chatting until the halftime show. Then came the real entertainment in the form of Katy Perry, Lenny Kravitz and Missy Elliott. I loved the half time show and thought Missy Killed it! It was good to see her back in action.

And congrats to the Patriots and this cute family celebrating Tom's 4th Super Bowl win:

Now that the game is over, it's time to get back on track and keep up the clean eating. I prepped the ingredients for this meal in the crock pot and placed it in the fridge until morning. Now all I have to do in the morning is take it out and turn the crock pot on low. There's nothing better than coming home from work, opening the door and smelling dinner slowly simmering in the other room. I'll make some rice and a veggie side to finish off the meal. Then it will be time to enjoy the comforting creamy and silky texture of the chicken swimming in gravy, knowing it's good for you too.

Country Slow Cooker Chicken and Gravy

Ingredients:

1 pound of boneless, skinless  organic chicken breasts
1 container of Organic Cream of Chicken Condensed Soup
1 packet of Organic Gravy Mix Chicken
1 cup water
1 tablespoon cornstarch
1 teaspoon dried sage
1 teaspoon onion powder
1 cup fat free organic milk
Minced Italian parsley for garnish if desired
Steamed brown rice for serving

Directions:

1.      Thoroughly mix together chicken gravy mix, onion powder, dried sage, Cream of Chicken Soup, chicken broth, water and cornstarch in the crock-pot with a whisk.
2.      Add the chicken breasts to the crock-pot.
3.      Cover with the lid and cook on low for 5 hours.
4.      Remove the beasts, place on a cutting board and shred the chicken with a fork into bite-sized pieces.
5.      Add the milk slowly until the desired creaminess consistency of the gravy is met.
6.      Place the shredded chicken back into the crock-pot and stir well to combine.

7.      Serve over whole grain brown rice, noodles or mashed potatoes with a vegetable on the side.
